When what you’re drinking melds with what you’re eating, something magical takes place in your mouth, in terms of sheer sensory experience. The top restaurants in America celebrate food and beverage pairing as an indispensable aspect of creating dining experiences their guests will never forget. But on the other hand, judging by the twelve things they’ve just told me, they’re not going to like that at all. What they’re going to love is a big-ass red from Australia. And their enjoyment is more important to me than getting the perfect wine and food match that they’re not going to enjoy at all. So, I’m going to disregard what they ask for and give them the thing they have come here seeking, which is comfort. I’m going to respect that they are not looking to be outside of their comfort zone.
